The Zeta's default mode is set to scan black and white text, since this suits the majority of resources in the Theology library. You do have 3 other options, however:
1) B & W photo. This is particularly helpful for newspaper photos or other images that have the grainy quality we associate with newspaper pcitures.
2) Greyscale. This is helpful when an item has yellowed or lightly colored pages, since these tend to darken the overall image when scanned in black and white, or when there are images or other components that do not show up well in the plain contrast of black and white scanning.
3) Color. The Zeta can scan in full color.
