Columns can be deleted in Blackboard by opening the Grade Center and selecting the down arrow at the far right of the column. This will open a dropdown menu, and "Delete Column" should be the last option. (see attached screenshot). This option will not appear if the grade column is connected with an assignment in Blackboard. If that is the case, the assignment itself must be deleted, which will result in the deletion of the entry in the Grade Center. Calculated Columns exist only to compile statistics on other existing columns, and therefore they cannot be manipulated on a student-by-student basis.
It is among best practices to not create columns manually in the Grade Center, but rather to create assignments somewhere in Blackboard, which will then automatically create the appropriate column in the Grade Center. The instructor has the option to show this assignment to students or keep it hidden, in the case that the instructor only wants it for the Grade Center entry.
